baked vegetarian nachos - Recipe

These are great for lunch or dinner and you can adjust the toppings to whatever you have in the fridge to make a delicious meal. This recipe is super easy with only four steps and will take under 30 minutes to make.
Instead of using tortilla chips I use wraps which works great in this recipe but they also taste great on their own for a snack either plain or with a few dips.

The Recipe

Ingredients
I have made these multiple times using lots of different ingredients so I've listed the ingredients for the nachos pictured and then also ingredients I have also used which work well.

For the tortilla chips:
  • Wraps (cut into triangles)- you can use any but I used some wholemeal seeded wraps
  • fajita seasoning
  • salt and pepper
  • oil

For the topping:
  • black beans- could also use pinto beans or red kidney beans
  • sweetcorn
  • quorn mince
  • tomato puree 
  • cheese- I used cheddar
  • fajita seasoning

could also use:
  • mushrooms
  • peppers
  • onion
  • refried beans
  • quorn chicken pieces

To finish:
  • sour cream
  • tomatoes

could also use:
  • avocado
  • salsa
  • feta


Method

Step 1
Place the wrap triangles into a baking tray seasoned with some salt, pepper and fajita seasoning, drizzled with oil and place into the oven for around 10 minutes.
Then keep checking on them every few minutes until they are crispy and remove from the oven.

Step 2
Heat a frying pan with a drizzle of oil and place all the topping ingredients except the cheese into the pan and fry until cooked through.

Step 3
Place the topping onto the tortilla chips, sprinkle the cheese on top and then place into the oven for around 5 minutes until the cheese is melted.

Step 4
Add the finishing items on top and enjoy.

Healthier banana pancake recipe



Perfect for a weekend treat, while still being healthy-ish.


Ingredients

1 banana
1 egg
1 cup buckwheat flour
1 tsp baking powder
1 cup oat milk (or any milk you have)
oil or butter for cooking (I use coconut oil)

Toppings - you can use whatever toppings you like 
maple syrup
cinnamon
dark chocolate 
blueberries- you can mix these into the mixture or just place them on when serving 


Method
Step 1
Mash the banana then mix in the egg.

Step 2
Add in the flour and baking powder and mix together, then add the milk and mix together to form the batter.

Step 3
Pour a third of the batter into the pan and cook until bubbles form on the top and then flip the pancake.
Repeat two more times with the rest of the batter.

Step 4
Serve with maple syrup and any extra toppings.

The Easiest Shakshuka Recipe

This is super easy to make and tastes great for breakfast, lunch or dinner. I love shakshuka and this is my personal spin on it. You can use whatever beans you have in the cupboard and add in any leftover veg you have in the fridge, as long as you have eggs and chopped tomatoes you can do whatever you want with it.





Ingredients- for 2


1x -Tinned chopped tomatoes
1 tsp -chili flakes
1tbsp -basil
1tsp- garlic salt
1tsp- pepper
1tbsp -maple syrup or sugar
1x- Can of Chickpeas, or butter beans, or black beans, etc  (drained)
4- eggs
Feta /or goats cheese



Method
Preheat the oven to gas mark 6

Step 1
Place the chopped tomatoes into a pan with the seasonings and cook until simmering for 5- 10 minutes.


Step 2
Add in the chickpeas and continue cooking for 10-15 minutes.

Step 3
Take the pan off the heat and crack the eggs into the pan.

Step 4
Crumble a handful of feta and/or goats cheese into the pan.

Step 5 
Place the pan back onto the heat and place a lid on the pan until the eggs are cooked how you like (the best is runny yolks- about 3-5 mins).

Step 6
Serve and enjoy!

White Chocolate Cookies // using coconut oil


Recipe

For 12 cookies

Ingredients-

100g coconut oil (melted)
175g coconut sugar
200g plain flour
1 tsp bicarbonate of soda
1 egg
150g white chocolate (chopped)



Method-

1. Preheat the oven to 170c
2. Mix the coconut oil and sugar together in a bowl
3. Mix in the egg until combined
4. Add in the dry ingredients
5. Stir in the white chocolate
6. Place the dough into 12 balls on a baking tray, leave space between them as they will expand in the oven
7. Cook for around 10 minutes, until they have browned
8. Allow to cool and then enjoy

August Faves




Food
Halloumi I have been obsessed with halloumi lately as it goes with everything and tastes so good! I like to grill it so it goes crispy on the outside.

Marshmallow squares Tanya bakes I went to the Tanya bakes book signing to get the book as I've watched Tanya Burr for so long and also other you-tubers but never been to a meet-up or signing so when I saw about the signing I was like "lets go"! Me and my friend went and had a good time however I'm guessing all meet-ups are similar but from this experience I found that; you wait in a queue for forever and then get rushed through to meet the person and then when its over your just thinking was it worth it! Obviously thats how it has to be to be able to get lots of people through so that lots of people can meet whoever it is.
Anyway, onto the book, I love 'Tanya Bakes'! There are so many amazing recipes in the book, I have tried a few and they have all turned out great. Recently, I made the marshmallow squares which are so easy and tasty. I would definitely recommend this to all of you out there who love to bake whether you watch Tanya burr or not.

Coconut yogurt
This yogurt is my fave! It has a slight coconut taste rather than full on like the coconut yogurts such as 'CoYo' so if you don't like those yogurts like me then try this.

Mango iced tea sachets 
When I was on holiday my go to drink was iced tea partly because I love iced tea but also iced tea always tasted better on holiday. In the local shop they sold sachets of the iced tea which you could buy so I thought I could bring the iced tea back and make it at home. It tastes so good and reminds me of being on holiday.
(If anybody knows where you can get anything similar to it then please comment as can't find it in the UK.)

Clothing/Accesories
Topshop trousers
These trousers are perfect! I wear jeans a lot and am kinda bored with them so these are an alternative which are still casual but can be dressed up if you'd want. They are super comfy and in my opinion still look stylish.

Olivia Burton Watch
I've had this watch since christmas but never mentioned it so I figured why not mention it now. I wear it everyday and love it. Olivia Burton has loads of really nice watches so check it out if you are looking for a new watch.

Beauty

Other
Jo malone candle
This candle makes your whole house smell amazing! It is a little pricey (however I did get given it as a gift) but I think it is totally worth it and a nice treat if you like using candles.
Pineapple tray
I got this to put my pandora bracelets and watch on and it adds a pop of colour to my table.

What I eat in a day- with recipes

This is what I ate on a casual day.

BREAKFAST -  healthy-ish pancakes

These pancakes are my go to if I want pancakes but want them to be a little bit healthier.

Recipe

Ingredients
- 1 banana 
- 1 egg
- 2 tablespoons buckwheat flour
- 1 tablespoon flaxseed powder
- muesli/ granola/ chocolate chips (optional)
Toppings 
- fruit
- maple syrup/ agave syrup

Method
- Mash up the banana 
- Mix in the egg
- Mix in the flour and flaxseed
- Add in the muesli/granola if using







I didn't have any syrup so they weren't as good as usual so I definitely recommend making sure you add syrup! (they were still good though)


 

LUNCH - tomato and sweetcorn giant couscous

Recipe

Ingredients
- giant couscous
- chopped tomatoes with herbs 227g tin
- sweetcorn small tin
- sugar (if you want it a little sweeter)

Method
- boil the couscous as stated on the packet
- drain couscous and add in tomatoes, sugar and sweetcorn
- keep on the hob until warm enough
- serve

     This picture does make it look a little like baby food or worse but trust me it does taste good.


TEA/DINNER (or whatever you call it)-  chicken with kale and butternut squash noodle stir fry

Recipe

Ingredients
- half butternut squash (diced)
- handful kale
- 1 chicken breast (diced)
- noodles (I used straight to wok udon noodles)
- olive oil/butter
- 1 tsp piri piri spice
- 2 tbsp apple chilli jelly
- soy sauce

Method
- Add oil to the pan
- add in the butternut squash and spices
- cook until slightly browned then put aside
- add chicken to pan with apple chilli jelly
- add in kale when chicken cooked through
- add in butternut squash
- add in noodles
- cook for a couple of minutes
-serve with soy sauce







EXTRA's

These are the snacks I had as well as the main meals.

- Candyfloss grapes
  I ate the whole pack of these throughout the day as they were so good. They are normal tasting grapes with a slight hint of candyfloss flavour .. mmmm.

- Some blueberries

- Nobbly bobbly ice cream
  I hadn't had one of these in ages and they taste greeeaat!
  If you've never had one they are chocolate and strawberry ice cream covered in chocolate with        
  sprinkles on the top.














- Sweets
  I watched a movie and ate some sweets, what can I say!

Tomato and Olive Giant Cous Cous

Giant cous cous is a new favourite of mine, I hadn't seen it before recently and so thought I would give it a try. It is kinda more 'pasta-y' than normal cous cous and as the name would suggest bigger!
You could use this recipe as a dish all of its own or have it as a side.

Method

Step 1
Boil the cous cous using the instructions on the packet then drain and place into a bowl.

Step 2
Add in chopped cherry tomatoes, olives, and sun-dried tomatoes with a little bit of the oil from the jar.

Step 3
Eat, that is all there is to it!

As you can see this recipe is super simple but still tastes really good!

Deliciously Ella


I have always loved cooking, especially baking and have spent many hours trying different recipes. There are a few cookbooks which are my go to and this is one of them!

This is my most recent obsession and I am getting through all the recipes and loving them. Healthy living is something that I am becoming to be very interested in. I am not vegan or vegetarian or have any specific diet but that doesn't mean I can't make foods which follow those diets. The plant based diet is something that maybe in the future I would like to follow but mainly just having a healthy lifestyle is most important.

Anyway, actually onto the book, I got this book for christmas and it has loads of amazing recipes but what I love the most is that there are a list of essential ingredients which is a great thing to keep in mind for food shopping or ingredients to use. There is also recipes to make some of these such as milk alternatives and nut butters. 

Because I have no life I actually organised my book by putting mini bookmarks in some recipes which I would like to try in different categories; breakfast, mains and snacks!

These are some recipes which are tried and tested and loved; 

Quinoa Pizza crust
Quinoa Tabbouleh
Buckwheat Focaccia
Falafels 
Ten- minute Tomato Pasta
Sweet potato brownies
Raw brownies
Almond milk

This is most of the recipes that I have tried as only a few have not been successful and there are loads more recipes to try which will most likely mean lots more favourites to come!

April Favourites




                                      This is what I've been loving in the month of April!
Nivea post shave balm
 So, no i haven't turned into a man or started to shave my face! As you may have seen you can use this stuff as primer so thats what I've been doing. It is super cheap ( 2 pound something from Wilko), smells really good (I personally love the smell of mens products) and it helps your makeup stick to ya face!

Maybeline eyeshadows (I have the colours: pink gold, on and on bronze, creamy beige)
I had these ages ago and a couple of weeks ago, got them out from my unused makeup and ended up getting back into loving them again. They work great as a base or on top to add extra colour.

Khloes Kardazzle 
Yess, there is a product called that and it is for your face! I got this around christmas from clothes show live and it is actually pretty good. The eyeshadows are really pigmented and my fave colour is the reddy brown in the corner. They do fade throughout the day however, but load on some setting spray and you'll be fine. The highlighters and blush are also great I use the whiter looking one on the left and this also fades a little bit but it gives a really pretty glow and applies nicely.

Dried mango 
I don't really know what to say except I love it because it tastes great and is the best snack! (also from eating so much of it I have found that the best places to buy it are Sainsbury's and Tesco's (their own brand) and Urban Fruit).

Sunglasses
These sunglasses are from Topshop and I'm obsessed, I just think that when you put on a pair of cute sunglasses you immediately look more 'glam'!

Zoeva brush (this is the brush separately but not in rose gold)
This brush is an eyeshadow brush and it is the only thing that you will need to do eyeshadow! Thats a pretty hefty statement but my point is this brush can put the colour on and blend it and makes applying eyeshadow really easy.

Revision Planner
If you are also in exam mode as you have GCSE's or other exams then firstly, I feel for you and we are in this together and secondly, get a revision planner, specifically this planner as its so cute. This is from an online shop called Sighh and they sell the nicest stuff. They do lots of phone cases (I have this one) and a few prints and other bits with the 'cutest' (replace cutest with anything else but I can't think of any other words but nice and cute) designs. So, basically check it out or be doomed!!

Bomber Jacket
I'm not going to say much about this as I have done a whole post dedicated to this beautiful jacket. I like it, I wear it, so I put it in my favourites.

Asos shoes
When I first got these shoes I was unsure whether I liked them so I messaged my friends and there were different opinions they were mainly like their nice and "they remind me of bowling shoes", not the response I wanted, but anyway after walking around in them and looking in the mirror at them a lot I decided to keep them and I am eternally thankful to past Olivia as I love them as they don't show my 'ew' feet and they look really spring/summery with every outfit and make me a little taller which is always a bonus.

Golden graham chocolate bars recipe

This is a really easy recipe and you can adapt it to what you have in your cupboards. I used golden grahams which just happened to be the cereal in my cupboard so you could use whatever you want.

Step 1: Crush the golden grahams by putting them in a plastic food bag and crushing them with a rolling pin. Crush them into pieces which are around quarters of the one piece of the cereal.

Step 2: Melt the chocolate and then mix with the golden grahams until fully covered.

Step 3: Place in the tin and squash down to make it even and cover with the the topping then place in the fridge covered with clingfilm.

Step 4: Melt the chocolate then add to the cream and mix thoroughly until it is all mixed together.

Step 5: Place the chocolate cream onto the base and add any other toppings then place back into the fridge to set.

Step 6: Once set cut into squares and eat!
Keep refrigerated.

Spicy bean and mushroom quesadillas

This recipe is great for lunch or dinner and tastes really good!
I named it spicy but it really isn't very spicy but if you would like it to be more spicy you could add a red chilli or extra spices.


Ingredients - for 1 person (easily doubled)
Wraps ( I used mediterranean herb wraps for extra flavour) - 1
Baked beans - 1/2 can
Ground cumin- 1/2 teaspoon (taste the sauce and add this to your own liking)
Baby button mushrooms sliced in halfs - 1/2 handful (basically as many as you want)
Cheese - you can use any cheese, I used cheddar (mozzarella, feta would go well with it)
Milk- tablespoon

Recipe
1) Put the beans into a pan and heat them up.
2) Add the cumin and then put the beans on a low heat to keep warm.
3) Put a knob of butter into the griddle pan and add the mushrooms.
4) Pour over about a tablespoon of milk and move the mushrooms around so that they don't burn.
5) Place the mushrooms onto the wrap then place this into the pan.
6) Pour over the beans then sprinkle over some cheese and fold the wrap over.
7) Leave the wrap in the pan until warm and slightly crisp.
8) Serve up in wedges and enjoy!

Garnier Micellar cleansing water
I got this after watching so many videos where people mention that face wipes are bad for your skin, and before this stuff I was a face wipe lover.I did think face wipes were easier, but trust me compared to this stuff they are slower to use and more expensive. 
So apart from comparing it to face wipes it is basically water with whatever Garnier put in it to remove your makeup and cleanse your skin.Another amazing part of it is it comes in a 400ml bottle which it says will last you 200 uses, I have not put that to the test but i'm sure it will last me a while.
I would definitely suggest to anyone that wears makeup and wants a quick, easy, and non stripping of the skin way to remove it.

Book
Fangirl by Rainbow Rowell
I read this book on holiday and I was so lost in the book that when i would look up to get a drink or ... I forgot where I was and kind of felt like I was Cath (a character in the book), and that's what this book does to you.The book is about a girl called Cath who has twin called Wren, and Cath's journey through college without her other half Wren; as Wren decides she wants to do the whole college thing without Cath. There is love, sister problems, family problems, fanfiction and lots more that i don't want to spoil for you!
Spoiler Alert: highlight it- put the twins names together! (I don't know why i find this so exiting!) 

Random
Papaja (flower pot) and Fejka (fake flowers) from IKEA
I don't know why but recently I have really wanted flowers in my room; unfortunately I don't think i could keep flowers alive so when i went to IKEA i got some fake flowers and a pot.They sit on my desk and I feel like flowers or any type of greenery adds a touch of freshness to any room; real or fake. TIP:Spray them with perfume so they smell good!

Music
Taylor Swift: shake it off
This song is super catchy and i also think its really motivational as "the haters gonna hate .." but you should just "shake .. shake it off"!

doddleoddle: stuck the way we are
I recently found Doddie's youtube channel (doddleoddle), she sings and plays the ukulele, and also plays the keyboard while singing.She has a few original songs, but she also does lots of covers; which are all amazing!
My favorite song of hers as I said is stuck the way we are; this song has her sister in it as do some of her others which is super cute, and I also think a lot of people could relate to this song.
